Okinawa Flat Belly Tonic
This is a traditional Japanese soup made from seaweed and dried bonito flakes.
This broth is used in many dishes.

You can use it as a multi-purpose soup base to make your own creative recipes using pasta, soy products and vegetables.

3. After 15 to 20 minutes, add the vegetables and let simmer for another 10 minutes.
4. Remove the saucepan from the heat, add the miso paste and grated ginger and stir.
5. Sprinkle with small spring onions and serve with warm Japanese rice wine.
Okinawan islanders cook this hearty dish on a rice steamer.
Here’s a quick and easy way to serve it with fish or vegetables.
You can use kombu seaweed and cut into strips, or you can use dark, thin strips of lamb quarters. It is suitable for 2 people.
- 200 g brown rice
- 2 strips of kombu seaweed or lamb
- Onion, finely chopped
- Clove of garlic, finely chopped
- Tablespoons of olive or canola oil
- Teaspoon of sesame oil
- 2 tablespoons of soy sauce
1. Wash and cook rice.
2. If using kombu seaweed, cook it for 20 minutes, then use scissors or a knife to cut it into match-sized julienne strips. If you are using lamb, soak in warm water for 15 minutes and then dry.
3. Pour the oil into the pan, fry the onion and garlic cloves while stirring, add the cooked rice and seaweed.
